If you throw away rice, don’t do it anymore! I’m going to teach you a very easy recipe with it!

Leftover Rice Fritters
Ingredients:
- Leftover rice (desired amount)
- 2 grated carrots
- 2 eggs
- Chopped fresh herbs (green onions, cilantro, etc.) to taste
- 1 chopped tomato
- 50 g grated Parmesan cheese (about 1 packet)
- Salt to taste
- Smoked paprika to taste
- Black pepper to taste
- Other seasonings of your choice
Instructions:
- Mix the rice, grated carrots, eggs, fresh herbs, chopped tomato, Parmesan cheese, salt, smoked paprika, black pepper, and any other seasonings you like.
- Shape the mixture into fritters.
- If using an air fryer: Place the fritters in the basket and cook at 180°C (350°F) for about 15 minutes, or until golden and crispy.
- If frying in oil: Heat oil in a pan and fry the fritters, turning them to brown on both sides.
- Serve the fritters hot, and if you like, pair them with a delicious mayonnaise dipping sauce.
Result: Crispy on the outside and soft on the inside, these fritters are a great way to repurpose leftover rice and turn it into a delicious meal!
